Langoustine carpaccio, granita and Minuty-flavored broth: a festive and elegant recipe by Juan Arbelaez


For the end-of-year celebrations, chef Juan Arbelaez offers you a recipe which combines finesse and refinement to surprise your guests: the Langoustine Carpaccio, enhanced by a granita and a broth flavored with Minuty Prestige Rosé. This simple dish is a true ode to balanced flavors.

Ingredients for 4 people:

  • 8 langoustines
  • 1 stick of lemongrass
  • 4 to 5 basil or coriander leaves
  • 100 ml of Minuty Prestige Rosé
  • 500 ml of water
  • 1 pinch of salt
  • 1 bird's eye chili
  • 1 lime
  • 1 teaspoon of Espelette pepper
  • 3 finger limes (optional)

Preparation steps:

1. Peel the langoustines

Carefully remove the langoustine carcasses, taking care to keep them for the broth.

2. Prepare the fragrant broth

In a blender, combine the langoustine shells, bird's eye chili, lemongrass, herbs, 50 ml of Minuty, water, and a pinch of salt. Blend until smooth.
Pour this mixture into a saucepan with a little water and bring gently to a simmer.

3. Prepare the langoustines

Place the langoustines on a sheet of baking paper. Make a small incision on their backs to remove the black filament (intestine). Cover them with a second sheet of baking paper, then flatten them with the bottom of a saucepan to obtain a thin, even carpaccio.

4. Make the granita with Minuty

In a stainless steel container, combine the remaining 50 ml of Minuty, the juice of half a lime, and a pinch of Espelette pepper. Place in the freezer. Scrape regularly with a fork to obtain a granita-like texture.

5. Dress the carpaccio

Arrange the flattened langoustines on a plate. Sprinkle them with lime zest, finger lime pearls (if using), a drizzle of olive oil, a pinch of Espelette pepper, and a pinch of coarse salt.

6. Finish the broth

Strain the broth through a fine sieve and pour it into an empty Minuty bottle for an elegant touch when serving.

7. Add the granita and serve

Place a few spoonfuls of granita over the carpaccio. Serve immediately, accompanied by a chilled glass of Minuty rosé to enhance the flavors.

Between the delicacy of the langoustines, the freshness of the Minuty granita and the intensity of the fragrant broth, this dish is a combination of flavors and elegance.
