For the festive season, chef Juan Arbelaez proposes a recipe which combines finesse and refinement to surprise your guests: Carpaccio of langoustines, sublimated by a granita and a broth flavoured with Minuty Prestige Rosé. This easy-to-make dish is a true ode to balanced flavors.
Ingredients for 4 people :
- 8 langoustines
- 1 stick lemongrass
- 4-5 basil or coriander leaves
- 100 ml of Minuty Prestige Rosé
- 500 ml water
- 1 pinch salt
- 1 bird pepper
- 1 lime
- 1 teaspoon Espelette pepper
- 3 caviar lemons (optional)
Preparation steps :
1. Shell the langoustines
Carefully remove the scampi carcasses, saving them for the stock.
2. Prepare the fragrant broth
In a blender, combine the langoustine carcasses, bird's eye chili, lemongrass, herbs, 50 ml Minuty, water and a pinch of salt. Blend until smooth.
Pour the mixture into a saucepan with a base of water and bring gently to the boil.
3. Prepare the langoustines
Arrange the langoustines on a sheet of baking paper. Make a slight incision in the back of the scampi to remove the black filament (intestine). Cover them with a second sheet of baking paper, then flatten them with the bottom of a saucepan to obtain a fine, even carpaccio.
4. Make the Minuty granita
In a stainless steel container, mix the remaining Minuty (50 ml), the juice of half a lime and a pinch of Espelette pepper. Place in the freezer. Scrape regularly with a fork to obtain a granita texture.
5. Arrange the carpaccio
Arrange the flattened langoustines on a plate. Sprinkle with lime zest, lemon caviar pearls (if using), a drizzle of olive oil, a pinch of Espelette pepper and a pinch of coarse salt.
6. Finalize the broth
Strain the broth through a fine sieve and pour into an empty Minuty bottle for an elegant touch when serving.
7. Add the granita and serve
Arrange a few spoonfuls of granita over the carpaccio. Serve immediately, accompanied by a chilled glass of Minuty rosé to enhance the flavors.
Between the delicacy of the langoustines, the freshness of the Minuty granita and the intensity of the fragrant broth, this dish is a combination of flavor and elegance.
