Ingredients :
Lobsters & Bisque
• 3 live lobsters
• 4 cl of Armagnac
Mayonnaise
• 1 egg yolk
• 1 tsp aji amarillo
• 1 pinch of salt
• 100 ml of olive oil
Pickled red cabbage
• 1/4 of a red cabbage
• 100 ml of white vinegar
• 200 ml of water
• 4 tablespoons of honey
Lobster claw garnish & seasoning
• 1/2 heart of romaine lettuce
• 1 green onion (scallion)
• 1 pinch of paprika
• 1 lime
• 2 pitas
Optional trim
• 1 jalapeño
• 1 tin of caviar
